Happy Thursday!! I’m a little delayed in getting this out to you today! It’s been quite the travel day in getting to Louisville, KY. We ended up sitting on the plane for 2.5 hrs before leaving Austin. Oof. I’m glad that I at least had all my snacks packed ;) I’m headed back for a long weekend to run the Kentucky Derby Mini Marathon on Saturday and then have some fam time. I’m excited to race again, especially in my hometown.

This week’s new recipe was on repeat for lunch and dinner this week. I love a good sheet pan meal for minimal clean up, less overall cooking and generally having enough for leftovers the next day too. This Lemon Chicken & Veggie Sheetpan has all the light and delicious flavors of spring and truly so delicious. This can easily be made for a weeknight dinner or prepped ahead of time and reheated throughout the week.
