Hi friends! How’s your week going!? After a very busy April, it has been nice to get back into a routine this week. I started with a grocery trip on Sunday (which I haven’t done in forever—I really am loving grocery delivery lately ;)) and then a full meal prep to get the week started on Monday. When I do a full meal prep, it generally means a make ahead breakfast, some type of simple salad for lunches, a good to reheat dinner option and some protein snack. I always wash the fruits that I pick up too!! I use this for my fruit wash.

This week’s meal prep plan includes a few of my favorites and go-to’s when I want to get the prep done quickly and efficiently for the week! The new recipe is for this One Pan Broccoli Cheddar Chicken & Rice which is a comforting, super simple meal! I love all things broccoli cheddar and knew I had to create the coziness of this into an easy dinner for you. The leftovers of this dish are great to reheat too, making it easy to add to your weekly meal prep!

Do you find yourself wasting food week after week? Here are a few tips for maximizing your meal prep as well as leftovers from your dinners (which are a great way to meal prep for the next day too!)

  • Invest in good storage containers! I love these and they quickly became a staple in my kitchen.

  • These reusable bags are also great for fridge and freezer storage! I use the large size for storing my Make Ahead Breakfast Sandwiches in the freezer and they will last up to 3 months in these bags.

  • Wash your fruits and veggies immediately after purchasing so they will last longer! If you don’t do any prep for the week, at least do this!!

  • Reheat by the portion. There are many options to reheating whether it be the microwave, back on the stovetop or in the air fryer.

  • Be sure to let all food COOL before storing it! This is a must in making sure food is storing well and not getting soggy after storing! Room temp is a must!
