Happy Thursday!! Another meal prep coming your way this week! I’m sending this in route to West Palm Beach for the weekend! I’m so excited to be on the beach for a few days. Since it was a shorter week for me, I only did a small prep which generally includes something easy in the fridge for breakfast and a dish I can have for either lunch or dinner! Making meal prep work for your schedule, even during the busy summer months, is key to a successful week of meals.

This week’s new recipe is for this One Pan Ground Turkey Caprese. I love everything Caprese this time of year! It’s light and delicious, using up ingredients like tomatoes and fresh basil which are perfect to grab right now. You can enjoy this on it’s own for a protein packed meal or pair it with orzo or any pasta too! I love this one.
