Happy Thursday! Happy June! I can’t believe we’re already in June. I’m a little bias to this month because it’s my birthday month so there’s always a lot to look forward to. I also looove summer recipes!! So much freshness and summer salads are perfect for the meal prep routine. Summer can be busy busy so if you’re looking for a way to create some balance amidst the chaos of the week, prepping a salad to have ready for the week is a great place to start.
This week, I have a new one for you! This Pesto Chicken & Broccoli Salad combines a few of my favorite things of pesto + chicken salad. It’s SO simple to make, lasts in the fridge for days and great to eat alone or serve with chips. It’s everything you want in a summer meal prep dish: packed with protein, bursting with flavor, and sturdy enough to hold up for a few days and still taste delicious!!
