Happy Thursday! Another meal prep coming your way! I’m so excited to share this summery new recipe for you! After being gone last week, I was ready to get back into a routine and with that means a full meal prep too. I always try to make meal prep work into my schedule depending on the week. When I do a full prep, I will make a make ahead breakfast to easily reheat, some sort of pre-made salad for lunches, a sheetpan or one pan meal that works great for leftovers for dinner and then some protein-ish snack! Then I will always wash, soak & store any berries that I have so they last longer (everything I use for berry wash here!) If I have a shorter week or maybe out for lunch/dinner, I will shorten this to 1-2 meals! That seems to work best for me in still feeling prepared with some healthy options.
