Happy Thursday! Anyone else confused on their days this week after the long holiday weekend!? This week flew by and I can’t believe we are about to be in JUNE! I’m partial to entering the new month since it is my birthday month too ;) I’ve been fully into testing the summer recipes and feeling so inspired by all the fresh summer salads and easy meals for this time of year! SO much goodness coming your way.
This week, I prepped these Street Corn Inspired Rice Bowls. I love everything street corn and especially this time of year!! These are great because you can easily assemble a few bowls to have ready to grab and go for lunch or dinner or just prep the ingredients separately. They are packed with flavor while still being so simple to make too!
If you’re starting to feel the busyness of summer travel, school being out etc., meal prep is a great way to create some structure into your meals throughout the week! It can easily be made to work for YOU. Even prepping one thing can go a long way during the hectic weeks! Maybe this weekend try to set a timer for an hour and see what you can get done. I know you’ll love it once you have some healthy, easy meals ready to go.
