Another week of meal prep coming your way!! This week was a good one! I’m so glad I had it ready because I came down with a bug yesterday and I definitely did not feel like cooking. I made a new flavor of my favorite cottage cheese egg bites, a freezer-friendly lunch or dinner option with the taquitos and a perfect meal to make for on the go lunches or easily assemble for at home meals.
There are many weeks where I don’t necessarily “feel” like meal prepping. It takes time to prepare, grocery shop, do the prep, wash the dishes—I get it! But I’ve never regretted having these nutritious meals ready to go for the week. Generally, I’m thanking my self for taking the time to get it done. I find this comes up a lot with my marathon training too. Not every day am I excited to get out the door for a run! But, I always am happy I did. How I feel after and continue to feel for the rest of the day is sooo worth it! Sometimes just setting up these habits can create long term success.
Maybe try creating one step in the habit of meal prepping! Create your weekly plan for the week or prep one item to have ready.
