Hi friends! Happy Thursday! I hope you're having a great week and hopefully enjoying some warmer weather wherever you are!! I got back from Mexico City which was sooo incredible, definitely a top favorite places I’ve visited! Unfortunately, the last few days I’ve been spending a lot of time on the couch trying to get over a bug that knocked me out on Tuesday. Hopefully i’ll be on the mend soon and can get back in the kitchen!! I have so many spring recipes I want to make for us ;)
In the meantime, I have a new 3ish ingredient Oatmeal cookie for you to add to your prep! Who doesn’t love having a little sweet treat ready for the week!? The best part about these are they are sweetened with the natural sweetness of very ripe bananas and you can customize with any mix-in’s that you have on hand or prefer! I also prepped one of my favorite chicken salad recipes which is perfect for the spring weather too—the lemon basil combo is my favorite!
