Hi friends! How are we already at the end of March!? After a busy month, I’m looking forward to a few weeks back home and getting back into a routine here. More home cooked meals in my future!!
When I got back in town Tuesday, I did a small grocery haul to get through the rest of the week. One thing I knew I could throw together quick and would be great to have on hand for breakfast or a snack is this Lemon Poppyseed Chia Pudding. I will be having this on repeat all spring!! The flavors here are so good and one jar packs in 12g of protein! I love to make these into parfaits with additional yogurt, granola, fresh berries and honey drizzled on top. You can literally make this in under 10 minutes!!
